My aunt's sought after pancakes!

Ingredients needed:


· 1½ cups 00 flour

· 3½ teaspoons baking powder

· 1 teaspoon salt

· 1 tablespoon brown sugar

· 1¼ cups milk

· 3 tablespoons melted butter

· 1 large egg

· 2 teaspoons cinnamon powder

. fruit or jam of your choice


Method:


1. In a large container, mix together flour, baking powder, salt, sugar and cinnamon powder.

2. In another jug, mix the beaten egg, milk and melted butter together.

3. Make a hole in your dry ingredients mix and pour slowly the liquidy mixture into it.

4. Beat until it’s a smooth mixture.

5. Heat a lightly oiled non stick frying pan.

6. Pour small amounts of batter.

7. Brown on both sides.

8. Serve with chopped apples and blueberries.

9. See recipe for Auntie’s Apple Pie Jam if you prefer this jam instead of fruit. If serving with this jam, eliminate the cinnamon powder from the pancake ingredients.


Memories:


Nothing but sweet memories of us all cousins gathered round my grandmother’s kitchen table seeing auntie mixing ingredients whilst telling us all beautiful stories about lands far away. Funnily enough, she had never been anywhere except the tiny island of Malta where she was born however she was an avid reader with a photographic memory.


She used to describe lands far away and we believed she had really travelled loads. I always wondered why she was always stuck at home round the kitchen table instead. I knew her feet were always swollen and somehow I had thought better not to be as nosy as usual so I never asked.


I only got to know years later that she could never walk long distances let alone venture herself on those travels.


Nonetheless, her love for reading took her places and encouraged all of us cousins to undertake the dreams she could never be part of.
